This sponge and pudding mix is so easy, just add water to create a light sponge. Perfect for a classic Victoria sponge. Makes a wonderful steamed pudding. Suitable for vegetarians. Conforms to 2024 salt guidelines.

Fortified Wheat Flour (Wheat Flour, Calcium, Niacin, Iron, Folic Acid, Thiamin), Sugar, Vegetable Oils (Palm, Rapeseed), Raising Agents (Glucono-Delta-Lactone, Potassium Bicarbonate), Dextrose, Whole Egg Powder, Emulsifiers (Lactic Acid Esters Of Mono- & Di-Glycerides Of Fatty Acids, Propane-1,2-Diol Esters Of Fatty Acids), Dried Glucose Syrup, Skimmed Milk Powder, Colour (Algal Carotenes).
MAKE UP INSTRUCTIONS Place required amount of mix (see table below) into a bowl. Using a beater, blend in approximately half the required amount of water on slow speed. Mix for 2 minutes on medium speed. Scrape down, add remaining water and mix for a final 3 minutes on medium. BAKING INSTRUCTIONS Scale at 225g/8oz for a 15cm/6" sandwich pan or at 1.8kg/4lbs for a large baking sheet. Bake 15cm/6" tin at 195°C/380°F/Gas Mark 5 for 20-25 minutes and baking sheets at 200°C/390°F/Gas Mark 6 for 25-30 minutes. STEAMING INSTRUCTIONS Scale at 225g/8oz for a 450ml/1 pint basin and steam for 30 minutes. Scale at 560g/1.25lbs for a 40cm/16" sleeve tin and steam for 50 minutes.
